Recipe of the month, updated March 2010

 

Now we are approaching Easter, your thoughts may be turning to guests arriving and all things chocolaty! How about trying this simple and delicious recipe for Chocolate Brownies? They are irresistible!!

 

Ingredients

240g dark chocolate (70% is best, and do use Fair Trade)

100g unsalted butter

3 eggs

135g golden caster sugar

55g plain flour

Cocoa powder, to dust

 

Method

Line an 18 cm square deep baking tin with bakihg parchment, and preheat the oven to 150C, gas mark 2.

Gently melt the chocolate and butter together, stirring regularly and not letting it get too hot. Set aside to cool, until luke-warm.

Whisk together the eggs and caster sugar until light and creamy. Sift in the flour, and fold it in. Fold in the molten chocolate until thoroughly mixed.

Pour the batter into the baking tin and bake until the brownies have risen slightly and the top is firm to the touch, about 25 minutes.

Now leave to cool in the tin until completely cold, then dust with cocoa powder and cut into squares.

Serve, and eat some yourself before they all disappear.They also make a great dessert, warmed slightly and served with ice cream.
